‘La Trappe’, the name of the beer brewed in Koningshoeven, is the only Trappist beer in The Netherlands. Only beer brewed in a Trappist monastery under the supervision and responsibility of the monks may be called ‘Trappist beer’. La Trappe is brewed according to traditional methods, from a recipe developed by the Trappist monks of Koningshoeven, using only natural ingredients, such as hops, barley malt and yeast. The brewery uses water drawn from its own well in the beer. The fermentation process characteristic of the type of yeast which is used, is most active between 18 and 20 degrees Celsius (or 66 and 70 degrees Fahrenheit) and is known as ‘top fermentation’. The beer is bottled with yeast and sugar, which allows the fermentation process to continue in the bottle, giving La Trappe a unique aroma.
Since 1997, the brewery De Koningshoeven B.V. (an independent subsidiary of Bavaria N.V. in Lieshout), has rented the buildings from the abbey and produces Trappist beer there, under the authority and supervision of the monastery.
La Trappe Quadrupel is a unique Trappist beer that is put to rest and sorted by year in the cellars of the abbey for further fermentation. This is the strongest beer of La Trappe with a beautiful amber colour. The warm taste is full and well-balanced, a little sweet and pleasantly bitter.
Since 2008, La Trappe Quadrupel is also fermented in oak barrels. This gives the oak-aged Trappist beer an even fuller taste with a special woody scent, which is comparable to wood-aged red wine. La Trappe Oak Aged is available in bottles of 37, 5cl and exclusively for sale at the store at the brewery.

La Trappe Tripel’s aroma is slightly malty and estery. Despite its full, rich flavour, this out-of-the-ordinary ale still has a light and dry aftertaste with a touch of bitter finesse. Although the La Trappe beers vary greatly from one another, they also have similarities. Each is a pure beer. Unique beers brewed with patience, passion and traditional craftsmanship according to secret recipes of the Trappists.
We use only natural ingredients in our brewing process: hop, barley, yeast and water from our own spring. Fermentation is done with a type of yeast that is most active at 18°C to 20°C. We fill the bottles with the beer, yeast and sugar. Consequently, La Trappe continues to ferment in the bottle and develops a unique aroma. The flavour and aroma get all the time to ripen. The result is La Trappe, an authentic Trappist beer.

On the palate it is clean and crisp, with a little bit of that herby bite, but mostly a medium-bodied layering of lemony fruit and more spicy undertones.
